I was baking my sourdough and realised my starter did not grow well. I took 20g to re-grow my starter and use the remaining 100g to make 4 sourdough crepes.
I got a little creative and serve it with greek yogurt, banana, blueberries and manuka honey. You may replace banana and blueberries with your favourite fruits like strawberries, peaches, mangoes etc. If you do not have honey, you may replace it with raw maple syrup.
The crepe is soft in the middle and crispy at the side. This one is definately my family’s new favourite breakfast/ dessert.
(This recipe does NOT contain sugar! Yay!)
Ingredients
100g sourdough starter
1 egg
1 tbsp melted butter
Pinch of salt
1 tbsp Greek yogurt for each crepe
1 Banana
Handful of blueberries
Manuka honey
Preparation Method
Whisk 1 egg, melted butter and salt in a mixing bowl
Add sourdough starter, whisk until well combine.
Add 2-3 tbsp milk to form thin batter.
Melt 1tsp butter onto a flat pan over medium heat
Scope 1/4 of batter in pan and swirl the pan quickly to spread the batter evenly forming a round crepe.
Cook for 3-5min, flip and cook the other side
Place crepe onto plate, spread 1tbsp yogurt over half of crepe, add slice banana and blueberries. Drizzle some Manuka honey.
Serve and enjoy
