I brought my children to Tokyo Disneyland three years ago and watched the hotel chef prepared one of the best french toast. Its crispy on the outside and super soft in the inside.
Here's Sunshine attempt and my children love it!
Recipe
2-3 thick slices Sourdough (or you can use Baguette)
2 eggs
30ml milk
1tbsp Japanese honey (or you can use maple syrup)
1tsp Cinnamon powder
10gm butter
To Serve
1tsp Japanese honey
10gm butter
Method
Preheat oven at 200°c
In a clean bowl, beat the eggs with the milk, Japanese honey and cinnamon powder.
Dip the sourdough cubes into the egg mixture and let it soak for at least 3min. Make sure every part is coated and the eggs is absorbed into the bread.
Heat up a frying pan with medium fire, add butter. Swirl the pan quickly to make sure the butter melts and cover entire pan. Do not burn the butter (very important)
Place the sourdough cubes into pan one by one. Flip and make sure all sides are light brown. (Fire control is important here. Fire too high - the toast be burnt. Fire too low - the toast becomes soggy and not crispy)
Transfer all the toast cubes into oven and bake for 5min. (This step bake the inside of the toast so that it is soft and not soggy)
To serve, transfer the toast to plate, stack them up like pyramid. add butter on top and drizzle the Japanese honey over the butter.
