My daughter invited a friend over for lunch and she is a vegan. I made them this light beetroot sandwich and her response is "OMG! This sandwich blows my mind! I cannot tell it's beetroot! It's so DELISH!"
I baked sourdough every day and hence, there is always bread in the house. For the beetroot pattie, it's prepared 1 day ahead of time and kept in the freezer. [You can make more and store it in the freezer for future use]
This recipe makes 6.
Ingredients
10 slices of Sourdough bread
1 avocado (sliced)
8-10 white mushrooms (sliced)
half onions (sliced)
1 cup spinach
4 slices of vegan cheese
1/4 up Olive oil
Beet root patties
300g beetroot (cooked & mashed)
200g pumpkin (cooked & mashed) - another option is potatoes
50g quinoa (cooked)
50g breadcrumbs (made from sourdough)
1tbsp olive oil
1tsp cumin & cinnamon powder
1tsp black pepper
1tsp salt
50g potato flour
Prepare beetroot patties
Cooked the beetroot & pumpkin in a pot of water until soft, drain and mashed
Cook quinoa, drain and set aside
Combine the mash beetroot and pumpkin.
Add salt, pepper, cumin, cinnamon, mix well
Add oil, quinoa and breadcrumbs, potato flour mix well
Divide the mixture into 6 portions and shape each portion into burger size
Freeze overnight
Cook mushroom and patties
Add 1 tbsp of olive oil to a medium heat pan
Add onions, stir for few minutes.
Add mushroom, stir until soft, set aside in oven at 50ºc
Add 2 tbsp of olive oil in another clean pan over medium to high heat
Place frozen beetroot patties onto the hot pan. Cook about 3min on each side or until light brown. Reduce heat to medium-low and cook for another 1min on each side. Set aside in the oven at 50ºc
Prepare the sandwich
Place sliced avocado on the sough dough and add half slice of cheese on top of the avocado.
Add the warm onions and mushroom on top of the cheese
Place another half slice of cheese on top of the mushroom and add the warm beetroot pattie onto the cheese (make sure the mushroom and beetroot are warm, this will melt the cheese), Optional: Add Mayo, mustard or BBQ sauce for more taste if desire.
Add spinach on top followed by a slice of sourdough.
